The XX special “Venuti’s Foodgasms” Lasagna recipe:

Please note: we went by taste so portions may not be exact!

            • 2 onions (1 red, 1 white) – diced
            • 1/2 celery – diced
            • 4 carrots – diced
            • Olive oil – good splash
            • Prosciutto – we used about 5 slices of San Danielle cut into thin small slices
            • 2kg beef mince
            • Red wine (about 250mL)
            • Tomatoes (fresh homemade passata or you can use Italian canned tomatoes)
            • 4 bay leaves, optional bunch of thyme
            • XX special ingredient for the boys… “Hot Salami”
            • Prosciutto slices – San Danielle
            • Lasagna sheets – we used Barilla egg pasta
            • Grated parmesan cheese

Bechamel Sauce:

            • 6 cups milk
            • 7 tablespoons butter
            • 6 tablespoons flour
            • 1/2 tsp ground nutmeg

  1. Before anything… we downloaded the Magic Mike XXL soundtrack and set up the speakers in the kitchen!
  2. Whilst dancing and singing along to “Pony”, preheat the oven to 180′C.
  3. Now to start the special XX hot Italian sugo (sauce)… Combine the onions, celery, and carrots with olive oil to make a soffritto on medium heat in a large saucepan.  Cook until the onions are translucent, then add some sliced prosciutto.
  4. Mix through the meat and once browned through, add in the red wine.  Turn the heat up so that the wine boils off until all the liquid is evaporated.  Oh yeah… “the temperature is rising”… at this point, feel free to swap to the Magic Mike original soundtrack for “It’s Raining Men”.
  5. Add in the tomatoes, bay leaves, thyme (optional), and chopped up XX hot salami!  Season with salt and pepper to taste.  Bring the sauce to the boil, then back down to a soft simmer – and allow time to slowly and gently thicken the sauce (up to an hour).
  6. Make the bechamel white sauce, by melting the butter in a saucepan over low-medium heat, add the flower and stor with a whisk for 7 minutes or so until the flour has cooked through and it is a sandy colour.  Meanwhile, heat up the milk in a separate saucepan until just about to boil.  Once ready, mix in the hot milk, one cup at a time, continually whisking vigorously (again pump up the Magic Mike XXL soundtrack to help here).  You may also wish to refer to photos of Channing and Joe to inspire your arm strength as you let the sauce come to the boil slowly then turn the heat down as it thickens, continuing to whisk to ensure the sauce doesn’t get lumpy.
  7. Once both sauces are ready, it’s time to bring it all together.  In a square/rectangular dish, start assemble by spreading out some of the meat ragu, then cover with lasagna pasta sheets, follow this with more meat ragu, dollops of the bechamel, and a generous sprinkling of parmesan cheese… and repeat… and repeat… to finish – it’s time to add the special Venuti touch, lay out thin slices of prosciutto on top of the final layer of lasagna sheets.  Gently cover with a final layer of bechamel sauce (the thicker, the better) and plenty of parmesan cheese.
  8. Cover with alfoil, then bake in the oven for around 30 minutes.  Take the foil off for an extra 10 or so minutes to allow the cheese to reach perfectly golden status (just like the spray tans of the guys).  It should look simply mouth watering and you are pretty much 3
  9. When you are ready to present said lasagna to Channing and Joe (or anyone that you want to really impress with your talent for creating foodgasms), consider kindly calling for one of the lovely staff at the Park Hyatt Sydney hotel to slice and plate the lasagna up for you… now get ready to go to a place where only the most fortunate women in the world are allowed to enter.

Enjoy! xx
