What a Dish – Pumpkin curry with sweet basil

  • 140g pumpkin (sliced)
  • 80g curry paste
  • 60ml Coconut milk (fresh if possible)
  • 180ml pumpkin seed milk (this can be simply made with pumpkin seeds and water blended together then sieved through a nut milk bag)
  • 10g large red chilli (sliced)
  • Kaffir lime leaf
  • 10g sweet basil
  • 1g sea salt
  • 60g marrow (a summer squash vegetable)
  • 15g okra (sliced)
  • Prawns (optional)

  1. Blanche separately the okra, pumpkin and marrow in boiling water and cool it off in ice water, which helps retain it’s colour and texture.
  2. Heat up the coconut milk in a pan and wait until it lightly starts to simmer.
  3. Add the curry paste, kaffir lime leave and start to season the curry to your desired taste (we’re all different).
  4. Add the blanched pumpkin, marrow and okra to the curry mixture, and allow to simmer for 2 minutes more.
  5. Before serving, add the sweet basil and garnish with a few slices of the chilli.
