Sexy chef: Luke Hines – Raw Cacao

Luke, what lit your passion to cook?

My passion for cooking was born in the fact that food brings so many people together!
From impressing your special someone to feeding a big family. It is the connective tissue between our mouths, hearts and souls… and EVERYONE loves it!

You’ve chosen RAW CACAO as your key Foodplay ingredient.  What are your secret techniques in using raw cacao to ‘Hit the Spot’?

Cacao (raw chocolate) is a potent antioxidant, which contains chemicals that can actually enhance your physical and mental well being.  This includes alkaloids, proteins, magnesium, beta-carotene, leucine and lysine, just to name a few.

Raw cacao is actually a stimulant, so it is perfect as a kick start to any type of meal, evening, or activity.  It is what chocolate is before it is processed down to make what we eat today. But RAW cacao can actually be enjoyed in its natural state, proving it to be a superfood, super healthy, and super sexy in recipes. My special technique is keeping it RAW, REAL and DELICIOUS.

Your Foodgasms recipe - Luke’s Simple Raw Cacao Bites

raw cacao balls 2

Ingredients

  • 2 cups walnuts
  • 2 1/2 cups of dates
  • 1 cup raw cacao powder
  • Pinch of sea salt

Directions

  1. Prepare your dates by soaking them in water for 10-15 minutes so they are soft. Give them a good drain afterwards.
  2. In a food prcoesser add the walnuts, cacao and salt to a food processor. Blitz until finely ground. Now add the dates and blend until the mixture resembles a dry cake mixture.
  3. Place in moulds in the fridge, like ice cube trays.  Freeze for about an hour then enjoy!

How does that magical combination of DATES AND CACAO work together?
Dates act as a natural sweetness to cut through the bitterness of the cacao.

Can Foodgasms be healthy?  And how easy is to make healthy food Hit the Spot?
All of my foodgasms are healthy. It’s the only way for me to really give myself over to a foodgasm. I’d never want to fake it. We are what we eat so don’t be cheap, fake or nasty.

If you had one chance to give someone the best foodgasm of their life, what would you make for them?
I’d use raw Cacao to make a chocolate sauce, then use it on their body haha…

And finally… WHAT HAS BEEN YOUR MOST MEMORABLE FOODGASM?
The slow cooked Moran family lamb at Chiswick. Cannot beat it!!!
